
Just coming off my cleanse and craving some good stuff. I found this great recipe on Detoxinista’s website. I wanted to use the Coconut Flour I just bought as well as the Cacoa nibs (because cacoa nibs are a superfood and packed with antioxidants). So I added half the amount of chocolate chips as the original recipe and added Cacoa nibs as the other half. I also wanted to add some coconut so I did that and ended up with these delicious Coconut Chocolate Chip Cookies. Turns out, they’re actually gluten free and grain free.

Ingredients:
➡️1/2 + 1/4 cup Coconut Flour✔️
➡️1/4 cup Coconut oil melted✔️
➡️Just under 1/2 cup grade A Maple Syrup✔️
➡️1 tbsp vanilla extract✔️
➡️2 eggs✔️
➡️1/4 teaspoon pink Himalayan Salt✔️
➡️1 tsp baking soda✔️
➡️1/4 cup semi sweet dark chocolate chips✔️
➡️1/4 cup organic Cacao Nibs ✔️
➡️1/2 cup unsweetened Coconut✔️ (I used Coconut ribbons, shaved will work too)
Preheat oven to 350, line baking tray with parchment paper.
Whisk/beat/mix the first 7 ingredients in a large bowl.
Then add the chocolate chips, cacao nibs, coconut, and mix with a spatula.
Batter needs to be pushed together with the spatula. Use a scoop or tablespoon to gather the dough.
The cookies don’t spread so you need to shape them how you want.
Bake for 14 mins?, remove from oven, and let them cool before going to town on them ? ?
